Made this 2 times. The 2nd batch turned out much better and more delicious . I use coconut sugar in place of the sweetner listed. However, I am having trouble with the egg whites and the consistency pictured. My egg whites turn into a foamy meringue. I have made meringue before, and I knew it would stiffen up, and it did. Otherwise the rise was much better on the 2nd attempt and looked very much like the bread pictured. I seemed to fold in the mixture better 2nd time around. 1st time it looked like I had pockets of uncooked dough though the temp reading at 2 locations showed above 200 deg F. I blamed it on not folding the mixture with the eggs well enough.

Even my SO, who is neither gluten free nor diabetic, likes the taste and texture. I did cut down the salt, because like some others, I found the 1/4 teaspoon to be too salty. I wasn't sure exactly what to expect with this cookbook as it is written by a relative newcomer to the Keto Cookbook scene (though she's been around a while with her wonderful website). When the book arrived, I flipped through quickly and was heartened to see some new recipes I hadn't seen in any of the other keto cookbooks! That's a great start! Also, the front matter that talks about what Keto is and other tips, while plenty explanatory for a newbie, doesn't take up too much of the book, for those of us who already know that stuff.
Hi Brenda, There are various reasons but the most common one is that coconut flour is extremely absorbent and needs a lot of eggs to offset how much moisture it absorbs. If you used a liquid like milk or water, it would fall apart. That being said, this recipe is not dry or dense. Did you try making it? Whipping the egg whites creates the exact opposite effect and the bread turns out light and fluffy. Hope you’ll give it a try!
I bought this book based on how many good reviews there are and felt that there needed to be a real voice. This book is misleading. Easy Keto for Busy people translates to 'bland food that is kind keto with net carbs that are pretty high for each meal and usually take an hour-ish for prep and cooking." Her portion sizes for meals are confusing as it says something serves 4, but the food is barely enough to fill 2 adults. Which means you're eating double the net carb per meal as the breakdown suggests. Save your money, borrow it from the library, then return it and look elsewhere.

Was very pleased with this cookbook overall! Have tried several of the recipes and they have all turned out great. Directions are easy to follow and pictures are gorgeous and vibrant! I think some of the recipes are pretty simple and things most keto people have already tried, but the cookbook has a great beginner's general knowledge that makes keto so easy to do. This is definitely a cookbook for all levels of keto!
I just signed up after making the Easy Keto Bread. I truly believed my efforts were an epic failure when I set the pan in the oven to bake. What a huge surprise when the bread came out as advertised. Nice and firm. Baked it on the recommended temp, added 6 or 7 minutes. Pressed the middle and it was great. I let it cool. What was nice about it was obviously it’s low carb bread…hurray for that, but it cut well. Got 18 slices easily about 1/2 inch thick without breakage. Most importantly, it wasn’t greasy, or almond tasting overload, just delicious.
