I haven’t tried this recipe with anything other than cream cheese. The cream cheese is a pretty integral part of this recipe and is something I consider a “keto staple.” With that said, you could try using mascarpone cheese as a substitute. Or, take full-fat cottage cheese, blend it up in the food processor or blender, and use that as a substitute. Whatever you do choose as a substitute, make sure it has plenty of fat in it. Hi Jen, It sounds like it needed to bake for longer – this is why it sunk and was still moist. The timing varies by ovens and even different pans. I hope you’ll try it again and just keep it in there for longer. You can cover the top if it starts to brown too much. For the one you made, depending on how moist it was in the middle, you may be able to salvage it somewhat by pan frying the slices.

My brother is diabetic, and his doctor recommended a low-carb diet; I’m diabetic also, and gluten intolerant. I am a little confused about beating the egg whites with a hand mixer. I used 12 large egg whites as the recipe says. However, I did not add cream of tartar as I have none. I have been beating these egg whites for almost 40 minutes with an electric hand mixer and I still have not yet come to the consistency as your photo shows for stiff egg whites. So my questions are, is this amount of time normal for beating the egg whites? And what amount of time would you recommend if this is not the normal amount of time?

The slices will be small but it was delicious with melted butter. Keto bread recipes and I have tried quite a few have not turned out well for me. I had some Ricotta cheese that I needed to use so I decided to make this recipe. Although I wasn’t exactly sure how to calculate 1 1/2 lb to cups, I guesstimated using the Ricotta that I had which was about 24 oz. It turned out delicious!!! I also used an emulsifier instead of a blender. I didn’t want to have to scrape off the sides because I didn’t want to waste any of this deliciousness.
