You’d never have thought that Chinese cuisine would naturally produce delicious Keto burgers, but there it is! This has been one of my favorite dishes growing up in a Chinese household, and I’m really excited to finally share it with you. This eggplant burger recipe sticks pretty closely to the traditional Chinese recipe (often called Qiezi He or Qie He).
This is a quick and easy curry recipe as the fish takes only a few minutes to cook, so it would be perfect for a chilly evening when you don’t have time to spend too long cooking. The salmon is rich in healthy fats and if you don’t have green beans then you could use spinach or asparagus or even some broccoli florets to give you a warming and satisfying meal.
Eggplant. Many eggplants are big enough that you can cut them crosswise and end up with a slice the size of a bread bun. Grill them or bake them and make a sandwich or open-faced sandwich out of them with your favorite keto ingredients. However, keep in mind that the eggplant will be tender after you cook it so it won’t hold up as well as the other bread alternatives.
Hi John, You could possible try a hand mixer in a bowl instead of the food processor, but I haven’t tried it, so can’t vouch for the results. Most likely the bread would not be as tall because the mixer would completely deflate the first half of the egg whites when you add them to the batter. The second half should be folded so that part will be find. If you try with a bowl and hand mixer, let me know how that goes.
