I was looking for a quick way to test a bit of (raw) JALAPENO and came across your 90 SECOND bread. Typically, a mug version isn’t on my radar since I’ve taken up keto loaves of bread, cakes, cookies, etc., quantities of baking. BUT I am totally impressed at the texture, very English muffin, and wonderful flavor! I cut the salt to less than an 1/8th and put just a dab of butter into the mix before whisking it really well. DELICIOUS! Was very surprised to see it is a serving for 2 muffins although hubby and I split it to see about the JALAPENO spiciness (I can safely put more into the loaf I’ll be doing next). Long winded to express my thanks and appreciation for getting bread in a mug done quickly absolutely perfect!!

Does glucomannan break fast


When I first saw this amazing shrimp curry it was the beautiful color that got my attention, like sunshine in a bowl! This keto curry would be ideal if a friend drops by for lunch unexpectedly. After all, we all have a bag of shrimp hiding in the depths of the freezer! You don’t even have to have an Instant Pot as there are instructions here for stove top too, and although it will take longer you are only talking five minutes instead of one!

Tried this… texture is great… only issue is that we couldn’t find unflavored whey protein!! locally, so we just grabbed some vanilla… definitely affects the taste (more like a pound cake… didn’t rise that much (I did use my bread-maker), but going to change out the whey protein as soon as unflavored comes in and think I will add a pack of yeast and just a bit of sugar to see if that makes it rise better.
Made this bread yesterday. I was very sceptical whether it would seem like bread. I do not have a food processor. So I mixed the dry ingredients by hand. And folded the first half into them. Then I folded the ingredients as per the recipe and I was very pleasantly surprised. It turned out great and I will make it again. As for the egg yolks I made scrambled eggs and had them with my new bread for breakfast.

Don’t know why but cooking on the griddle gave a more eggy taste , like french toast and not as light.the micro gives best texture and gives the look of sliced bread. If I did not know that this was not bread made from wheat flour, I would not have known the difference – taste-wise. I added all of the ‘optional’ ingredients. Now, this loaf is not nearly the size of a regular loaf of bread. But it is incredibly filling. I slice it a touch thinner than 1/2 inch to make, what looks like, a finger sandwich. It satisfies my love for sandwiches and fills my up.

I had some Ricotta cheese that I needed to use so I decided to make this recipe. Although I wasn’t exactly sure how to calculate 1 1/2 lb to cups, I guesstimated using the Ricotta that I had which was about 24 oz. It turned out delicious!!! I also used an emulsifier instead of a blender. I didn’t want to have to scrape off the sides because I didn’t want to waste any of this deliciousness. I used strawberries, blueberries, and blackberries. OH MY–DELISH!!!! Thanks so much for putting this recipe out there for us.

I so miss bread fresh from the oven (I’m going to be adding the yeast)! You are absolutely correct about beaten egg whites creating air pockets. My family has always made buttermilk pancakes from scratch and we always separate the eggs, beat the whites to soft peaks and fold them in at the last minute. The pancakes rise beautifully! Have you tried this with your keto pancakes?

Unfortunately we aren’t at high altitude so we don’t have experience baking in that way. We’ve read that it can be helpful to slightly decrease baking powder, slightly increase liquids, and increase oven temperature by 25F. Please let us know how it goes if you try the recipe with any of these changes, and sorry we couldn’t be more help with this!

If there is one thing I'd change about this book - it's that it's not spiral-bound. (As a side note: this is professionally printed on HEAVY paper - not the cheap print-on-demand paper you often see. It definitely is built to last.) I can envision myself using it enough that I think I'll take it to be spiral bound myself. That will make it 100X easier to use.

Hi Ashley, Usually egg whites take just a few minutes to beat to stiff peaks. Definitely not 40 minutes. Old eggs can sometimes be the culprit, or a bit of leftover fat/grease from something else in the bowl can prevent stiff peaks (this is especially common when using a plastic bowl). Lastly, it could be that your mixer isn’t powerful enough to beat that many whites to stiff peaks, but this reason is a last resort and probably less likely. Cream of tartar is a huge help in reaching stiff peaks so you can try adding that next time.
This is BY FAR the best Keto Bread recipe anywhere, I make this weekly, and today I tried the same recipe only adding 2T swerve and 2T Raisins (adding 14 grams of carbs to the loaf but well worth it!) to make an Irish Soda Bread and I swear you cannot tell a difference between it and traditional Irish Soda Bread. I am going to try this recipe adding some shredded cheddar next week for a cheese bread, thanks for this versatile keto bread recipe that doesn’t taste like eggs!

I have a question I hope you can set me straight. I was putting the almond flour in my dry measuring cup and it didn’t seem right. I checked around the internet and found someone who said always weigh almond flour. So, I did. 8oz. = 1 cup so 8oz almond flour. It looks like enough but so much more than one dry measure cup. I got as far as doing the food processor part and realized I needed more eggs. So, I’m kinda in holding until I go to the store so, I thought I’d ask.. have I made a terrible mistake and wasted a lot of supplies or am I cool?

Can you eat mcdonalds on keto


This sounds amazing and I’ll be making it for breakfast this morning, but I think the carb count is a little off. I think it’s closer to 3g of total net carbs. I could be wrong, but there are almost 3g of net carbs in the 3 tbsp of almond flour, plus add a little for the baking powder and the egg? Maybe I’m counting wrong, or maybe it’s just my almond flour that’s higher than yours…

Hi Amber, Yes, the baking powder and egg whites do help it rise a bit, just not as much as regular bread. It’s hard to say what went wrong, if anything. Everyone’s palate is a little different, so it’s possible you just didn’t like it, or maybe something didn’t go as it should have. It could be that the batter and whites weren’t folded together quite enough?

Were the peaks in the egg whites not firm enough, or did they fall too much when folding with the rest of the batter? That is the main culprit I can think of, as the egg whites are a big part of what creates the volume in this bread.

I am a little confused about beating the egg whites with a hand mixer. I used 12 large egg whites as the recipe says. However, I did not add cream of tartar as I have none. I have been beating these egg whites for almost 40 minutes with an electric hand mixer and I still have not yet come to the consistency as your photo shows for stiff egg whites. So my questions are, is this amount of time normal for beating the egg whites? And what amount of time would you recommend if this is not the normal amount of time?

Nicole is correct about not using a plastic bowl. Plastic will even absorb oil to say nothing of the microscopic amounts that get into the surface when it’s scratched. When baking it is always best to use a metal or glass bowl for all of your mixing.

Because sardines are a good source of protein and B vitamins, they really are brain food! They are quick and easy to prepare and in this dish the olives add a lovely contrast in texture and flavor. Black olives are very healthy and the Kalamata ones are the best, but you can use whatever ones you have. This is a very low carb meal but full of taste and goodness and so keto-friendly!

I can have sandwiches again or a quick piece Of toast when I’m in a hurry to get out the door. I was skeptical about the xanthan gum since I tried a recipe using psyllium husk powder. I did not like it. I can’t taste the xanthan gum so I have no problem using it going forward. Thanks again for the recipe!!!
