Was very pleased with this cookbook overall! Have tried several of the recipes and they have all turned out great. Directions are easy to follow and pictures are gorgeous and vibrant! I think some of the recipes are pretty simple and things most keto people have already tried, but the cookbook has a great beginner's general knowledge that makes keto so easy to do. This is definitely a cookbook for all levels of keto!
Agree with post regarding salt omitted salt, grilled it first time. It definitely reminds me of corn muffins texture. This morning make recipe added 1 T. of swerve brown sugar and dash or cinnamon, nutmeg and chopped walnuts OMG. It was great topped with cream cheese frosting(cream cheese, butter ,vanilla and swerve confection .Thanks can’t wait to try pumpkin spice next time I’m craving carrot cake thanks so much!
I’m a little late to comment but I had to say how amazing this bread tastes. It has a chewy crust and light a fluffy inside. I’ve been keto for over two years and trust me I’ve tried every bread recipe out there. My husband and two kids, 10 and 7 years old, are also full keto and it’s unanimous that this was their favorite. I made this recipe adding 1/2 more of all the ingredients and ended up with a nice sized loaf. Thank you. Will definitely keep trying all your recipes. You certainly hit this one out of the park.
To Make Sure You Get the Best Rise: Make sure your baking powder and yeast are fresh. Let your egg whites come to room temperature before using. Cook for the recommended amount of time (and make sure your oven is properly calibrated). Measure all ingredients carefully (we recommend weighing the dry ingredients). Try to avoid the temptation to slice it while it's hot because this can cause the loaf to fall.
Hi Kaylee, I’ve substituted raw sunflower seeds ground dry in my bullet for almonds. I found it to taste better. Expect the color to be similar to the color of the seeds. I sub 113g sunflower seeds for every 1 cup of almond flour. As for eggs, shop around. I get pastured eggs for berween $4 to $6.50. Usually, on sale. Like this week, sprouts has buy 1get one free so that’s 2 dozens for $6.50. Even Publix to my surprise will mark down their pastture raised eggs to $3.50/dozen.

This is BY FAR the best Keto Bread recipe anywhere, I make this weekly, and today I tried the same recipe only adding 2T swerve and 2T Raisins (adding 14 grams of carbs to the loaf but well worth it!) to make an Irish Soda Bread and I swear you cannot tell a difference between it and traditional Irish Soda Bread. I am going to try this recipe adding some shredded cheddar next week for a cheese bread, thanks for this versatile keto bread recipe that doesn’t taste like eggs!
How do you increase autophagy
Hi Maya, I have made this twice and the first was actually closer than the second! The second one was raised really well when I put the foil on for the last 10-15 mins of cook time and when I took it out 12 mins later it had completely fallen! Now it is almost wet in the center though there are air pockets in it, it’s very odd. The first loaf was pretty flat the whole time and I am pretty sure that was because I didn’t have my egg whites whipped enough but they were spot on for the second loaf. I am also thinking it might be my baking powder after reading some of the comments. I plan to try again and just use a baking soda/cream of tartar mix rather than the baking powder. Any other suggestions? Anyone? LOL!
These little crustless quiches have the perfect balance of meat and vegetables, making them super-tasty and perfect for a quick snack or a lunch. These taste so good cold so would be great to take to work or pack in the kids’ lunchboxes. Just be a bit careful to taste the mixture before you add the salt as the ham can be salty enough, depending what type you use.
Hi Eva, That’s awesome that you are helping your son this way. I haven’t tried this with other tools, but you could probably use either the blender or the food processor. The key is to pulse in step 5, not just constantly blend, so that the whites don’t fully break down. Other than that, it should be pretty similar. As for the yolks, if you don’t want to make creme brulee, I usually just put a couple extras into an omelet (or breakfast casserole, or any other dish requiring cooked eggs) mixed with whole eggs.
Bread is often made with highly processed carb-dense ingredients and served with other calorie-rich foods that are far from healthy for us, but it doesn’t have to be this way. Alternatively, we can use low-carb flours and other healthy ingredients to make keto-friendly bread and bread products that boost our health and make us feel fuller longer so that we can finally eat less and look and feel better than before.
Stir fries and sautees are so quick to make that they are the best meals when you are short of time for cooking. This one only takes five minutes and is filling and delicious. This is a combination of ground beef and vegetables flavored with garlic and oregano, but you could use whatever ground meat you have; turkey works really well here. This is a low carb meal suitable for the keto diet.
Julian Bakery Paleo Bread. Julian Bakery makes loaves of bread that are made out of coconut flour or both coconut flour and almond flour. Both varieties have 1 gram of net carbs per slice and are paleo friendly and gluten free. You can usually find Julian Bakery Paleo Bread at your local health food store or if you can’t find it there, just order it from their website.
Tried this… texture is great… only issue is that we couldn’t find unflavored whey protein!! locally, so we just grabbed some vanilla… definitely affects the taste (more like a pound cake… didn’t rise that much (I did use my bread-maker), but going to change out the whey protein as soon as unflavored comes in and think I will add a pack of yeast and just a bit of sugar to see if that makes it rise better.
What do you eat for dinner on a keto diet
I would like to point out that the metric conversion of 3/4 cup to 90g coconut flour as stated in your recipe is incorrect. Should be 84g per package labeling (Bob’s Red Mill). Unfortunately I made my first batch with 90g of coconut flour, and it was definitely not “pourable”. More like scoopable. I will try again with correct amount but thought I would point so you can update the recipe. Thank you!
Made this today using my muffin top baking pan. It is perfect for sandwiches and I don’t have to cut them. That is good because my slicing ability is bad. So one batch makes 2 muffin tops. First batch emptied my coconut supply so I did another batch with double almond flour. Found that the almond flour by itself makes for a good sandwich. The batch with coconut and almond flour is sweeter, reminds me a bit of french toast, still good but not what I would like to have for a roast beef sandwich. Think it will be good with some almond butter on it.

Deb, Thank you so much for leaving a comment – we’re happy to hear you enjoyed the bread! Yes, the yeast in this recipe is for aroma/flavor. Unfortunately we aren’t at high altitude so we don’t have experience baking in that way. We’ve read that it can be helpful to slightly decrease baking powder, slightly increase liquids, and increase oven temperature by 25F. Please let us know how it goes if you try the recipe with any of these changes, and sorry we couldn’t be more help with this!
How do you defrost chicken thighs quickly
Maya, I can’t tell you how excited I am to find this recipe! I have three young cats who are on a raw diet. In my previous life I was a home economics major and was taught not to waste anything. So from making their raw food I have the byproducts of egg whites and chicken bones and skin. It all gets frozen for future use. I use the bones and skin to make my own bone broth but I have egg whites out the ying yang! They are frozen in jars with the measurement of the contents on the lid. Now I’m going to thaw some and make bread! Have you tried making french toast with this?
Hi Jen, It sounds like it needed to bake for longer – this is why it sunk and was still moist. The timing varies by ovens and even different pans. I hope you’ll try it again and just keep it in there for longer. You can cover the top if it starts to brown too much. For the one you made, depending on how moist it was in the middle, you may be able to salvage it somewhat by pan frying the slices.
If I did not know that this was not bread made from wheat flour, I would not have known the difference – taste-wise. I added all of the ‘optional’ ingredients. Now, this loaf is not nearly the size of a regular loaf of bread. But it is incredibly filling. I slice it a touch thinner than 1/2 inch to make, what looks like, a finger sandwich. It satisfies my love for sandwiches and fills my up.
It’ll have 100 recipes for keto bread-like items 🍞🥖🥨🥐🥞, including all your favorite kinds of slicing breads (white, wheat, sandwich, seeded, etc.), along with muffins, tortillas, crusts, crackers, biscuits, donuts, sweet pies, savory pies, and cakes, to name just a few, as well as all manner of things using these bread recipes (think family-friendly casseroles 🍲, masterful sandwiches 🥪, your favorite non-keto fast food remade into nourishing keto recipes 🌮🍔🌭🍕, and even crowd-pleasing dinners that you can entertain with 🍛).
So I was really excited to make this bread. Went and bought all the supplies. The bread didn’t come out good at all. The outside looked good but when I sliced it the center was still moist. So I put it back in the oven with the tented foil probably for another 30 to 45 and still most. I’m def bummed that I waisted a whole carton of eggs. Is there something I could’ve done wrong?
I have the very same conclusion about the bread as you did. It was moist and dry at the same time. It toasted very well. I did make a couple of tweaks in the recipe. It needs twice the salt, and keto acceptable sugar. I added 1 tspn of sugar, but next time, I will use 2 tspn. I also used one egg to lighten up the denseness of the bread. I adjusted the water because of the egg.
I tried this recipe today and I’m blown away. I haven’t started Keto yet but I am soon. I’ve been trying recipes out, and I truly didn’t expect this to come out right the first time because I’ve never whipped egg whites or folded them into anything. I’m a terrible baker. It was so easy! Even my toddler and husband loves this! I didn’t use the sweetener and love the way it tastes!
Hey Maya!! This is the 2nd recipe I’ve tried off your website and again I love it!! Turned out really well. I can have sandwiches again or a quick piece Of toast when I’m in a hurry to get out the door. I was skeptical about the xanthan gum since I tried a recipe using psyllium husk powder. I did not like it. I can’t taste the xanthan gum so I have no problem using it going forward. Thanks again for the recipe!!!

And, yes, the recipes are time savers *and* delicious. One Amazon reviewer wrote, "I flipped through quickly and was heartened to see some new recipes I hadn't seen in any of the other keto cookbooks!" Another praised, "Jennifer’s cookbook is for the average person shopping in the average grocery store who has a limited amount of time to prepare meals...like me!"

Is Bourbon a keto
Hi Kerstin, Sorry you had issues whipping the whites. It can sometimes be more difficult with the kind from a carton. The cream of tartar helps, but sometimes isn’t enough. Did you wait for the whites to be at room temp before beginning? This can help with whipping. Unfortunately the bread won’t turn out very well without getting the whites to stiff peaks. I hope it works for you next time, and if the cartons don’t work for you, you can try with the whites from whole eggs. You can use the yolks to make hollandaise sauce or creme brulee like this.
